Ingredients

  • 1 (9 oz.)  Smart Ones® Pulled Pork & Black Beans entrée
  • 1/2 cup cooked white rice
  • 1 large red bell or poblano pepper
  • 1 cup shredded carrots, cabbage, or cole slaw mix
  • 1 tablespoon light mayonnaise
  • 1 tablespoon white vinegar
  • 1/4 teaspoon dill seeds

Instructions

  1. Preheat oven to 375°F.
  2. Prepare the Smart Ones® Pulled Pork & Black Beans according to package directions. Stir in the rice.
  3. Meanwhile, cut the pepper in half, remove the stem and seeds, and place in a shallow pan. Fill the pepper halves with the pork mixture. Add 2 tablespoons of water to the pan. Cover with foil and bake for 30 minutes, then uncover and bake for 15 minutes or until the pepper is soft.
  4. Top the cooked pepper halves with the slaw.

Who would have thought you can whip up something so good in a few minutes. With the smart ones side dish it has all the ingredients. I used the Santa Fe rice ans beans and added it to the ground meat instead of the pork and it was fantastic.
