Slow Cooker Beef Stew Makes about 5 servings

  • 3 Smart Ones® Pot Roast meals
  • 1 1/4 cups vegetable juice, low sodium
  • 2 bay leaves, whole
  • 1 cup beef stock, low sodium
  • 3 Tbsp. all-purpose flour
  • 1/3 cup water


  1. Place frozen Smart Ones® Pot Roast meals into a slow cooker.
  2. Add vegetable juice, bay leaves and beef stock.
  3. Cook on low heat for 8 to 10 hours.
  4. After 8 to 10 hours, whisk flour and water together.
  5. Add flour and water mixture to stew and cook on high for an additional 15 to 20 minutes to thicken.
  6. Remove bay leaves prior to serving.
  7. Transfer to bowls and enjoy!

Spice it up at the same point value

My mom was one of the best cooks I know. When she made her pot roast, she always used vegetable juice instead of tomato sauce. There are several different brands and they all work great. It kicks the flavor up a notch. You can also add some cauliflower for a little more body.

Do you defrost first then make in slow cooker?
Not bad...but...

My boyfriend and I really enjoyed, but it really isn't for 5 people. I would make again, but wondering if anyone thought it was a very small amount.
