Ingredients

  • 1 tsp. Dijon mustard
  • 2 tsp. white balsamic vinegar
  • 1/2 tsp. herbes de provence mix
  • Salt and pepper to taste
  • 4 asparagus, whole or bias cut
  • 2 scallions, thinly sliced
  • 1 small yellow tomato, cut into wedges
  • 1 small golden beet, boiled, peeled & cut into thin wedges
  • 1 small Belgian endive, thinly sliced
  • Few Italian parsley leaves
  • 1 Tbsp. minced chives

Instructions

  1. Make a dressing by combining mustard, vinegar and herbes with salt and pepper to taste.
  2. Combine all ingredients in a medium bowl and toss well.
