Ingredients

  • 1 garlic clove, minced
  • 2 Tbsp. minced sweet onion
  • 1/2 small poblano pepper, seeded and minced
  • 1 baby eggplant, peeled and finely diced
  • 4 to 5 cherry tomatoes, halved
  • 1 Tbsp. minced fresh oregano
  • Few shakes of paprika
  • Salt and pepper to taste
  • 1/4 tsp. cumin

Instructions

  1. Spray a small saucepan with cooking spray.
  2. Add garlic and onion over medium-low heat for 2 to 3 minutes.
  3. Add pepper and eggplant and cook a few minutes longer.
  4. Add 1 to 2 Tbsp. water. Cover and cook on low for 10 minutes.
  5. Add tomato, spices, and seasoning and simmer for 10 minutes.
  6. Adjust seasoning before serving.
